Sweet Country Cornbread

I tore this recipe off a cornmeal package so many years ago I can't even remember the brand.  I've made this since before I had children and my oldest just turned 38.  I had a friend call me recently and ask me for this recipe so I decided to post it.  It's so easy to make and so good.  I make it with beans and ham as well as most of my homemade soups.

Ingredients:

1 cup milk
1/4 cup butter melted
1 egg
1 1/4 cups yellow cornmeal
1 cup Gold-Medal all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoons salt

Directions:

  1. Heat oven to 400 degrees. Grease bottom and sides of round pan, 8"x8"x2"
  2. Beat milk, butter & egg in large bowl, stirin remaining ingredients all at once just until flour is moistened (batter will be lumpy).  Pour batter into pan.
  3. Bake 20-25 minutes or until golden brown and toothpick inserted in center comes out clean. 


Makes perfect sweet cornbread every time.  Slather it with lots of butter and you're in heaven!
